  • Too many recipes with soy

    It is basically a vegan low-carb diet... Most of the recipes are with tofu or other soy products…That's the main reason why I didn't like it, especially that soy products (even organic) are a lot in critics…and personally I don't believe that being vegan you have to eat that much soy, we have a much bigger variety of foods in the "vegan world" that provide us with proteins... I tried some of the non-soy recipes which were reasonable and definitely not all are doable in 30min or less… Oh, and there were way too many pictures of this guy just posing in this book…he is a bit too much in love with himself...

    I have tried already several recipes. For breakfast: mini-crunch pancakes with raspberry yoghurt ice-cream, amaranth-yoghurt pop with raspberries ; Lunch: zucchini-spaghetti bolognese, and filled bell peppers with roasted pumpkin-lentil filling. Nothing took longer than 30 minutes to prepare. I had most of the ingredients on hand - except for the popped Amaranth! But I found that in Whole Foods. And oh, my gosh, the flavours are intense! Even my picky 14-year old loved the dishes. I would definitely recommend this cookbook. I also got the other one "Vegan for Fun"… :-)
